This author begins this week's newsletter with a Bible verse that I often turn to in times of hardship. As I have shared many times before, we continually honor those who have walked this path before us, lighting the way for our own journeys. We are grateful to everyone who selflessly guide us, offering wisdom and opportunities for growth.
Our circuit has always been a place of unity, mentorship, and support for juniors. I sincerely hope that our commitment to departmental growth not only endures but continues to strengthen.

Newcomers!
I am certain that many of you have noticed that we have indeed gained some new blood in our midsts. We would like to welcome Dr Kelly Rosslee and Dr Anke van der Walt. In a bid to find out more, we have done a very informal interview. (Fancy way of saying interrogating them on WhatsApp). Without further ado, the tea on our newest recruits!

Some inside scoop on Dr van der Walt
Birthday: 22 March - making her a whole Aries for people who believe that star signs change your life. It's not polite to include a lady's age in conversation! Except Marde (pink pony club lover 🦄 ) - cos she constantly reminds you that she's "so much older than us".
Anke spent two years in the Republic of WC for internship at Paarl Hospital then com served at Rahima Moosa Mother and Child Hospital. She followed up working as an investigator for Wits Health Consortium. She worked on clinical trials at Sizwe Tropical Disease Hospital (research - the soft life was not for her😅)
When asking her about Steve, she also studied at UP , but also, who doesn’t know Stevie?
In terms of hobbies, Anke favours exercising, walking the dogs with her hubby and reading. We definitely can relate! With her future sights firmly set on being more settled with 2 kids and hopefully almost finished with reg time in 5 years time. 🤓
Asking about her favourite go-to artists, she mentioned Ziggy Alberts/ Zach Bryan with clotheslines from Henrik is her go-to. For those of you who has never heard it before, click on the YouTube link below 🤓
Being a pet driver department with more than half of us having fur babies, Anke also has 5, all rescues and they being her pride and joy! 2 border collies (featured above) and 3 cats 🐶🐶🐱🐱🐱
My final question to Anke was "What is your dream destination to travel?"
"Hmm difficult to choose; I would rather follow an event, eg. Go watch Wimbledon live at the stadium or Grand Prix at the track or the Rugby World Cup in a cool country and then make a holiday of it"
Great plan! I also recently made a similar decision to follow my significant other to Italy for his conference. A huge thank you for participating in our newsletter feature!

Korean Beef, Rice & Cucumber Salad Bowl
512 Cal | 52g Protein /53g Carbs / 1.9g Fat
Ingredients
Beef 800 g top sirloin cut against grain into thin slices, marinate with 2 tbsp cornstarch, 1/2 tsp salt and pepper to taste
Aggressively 😏 wok sear the beef in batches limiting oil input. IN BATCHES. Spray and cook works very well here.
Sauce
1/3 cup soy sauce, 3 tbsp gochujang Korean red pepper paste (1 tbsp = mild, 2 tbsp = med, 3 tbsp = hot), 3 tbsp sugar replacement (equal sugar reduces sugar usage by 50%, Faithful to nature has monk fruit sweetener, Yuppiechef has sweetly), 1/4 cup beef broth, 1 tbsp rice vinegar, 6 tbsp garlic minced, grated ginger, 1 tbsp cornstarch and 1 tbsp cold water for a slurry
Cook sauce until thiccc with three c's. Then mix the beef into the sauce. THIS IS WHERE CALORIES DON'T COUNT. TASTE TEST. ONE calorie free piece. Taste and make sure it is seasoned well. If you finish it before the meal prep well at least you enjoyed the process.
Cucumber Salad
Thinly slice 2 English cucumbers with a mandolin and marinate with 1 tbsp rice vinegar, 1 tsp sesame oil (roasted sesame seed oil... and roasted ONLY), 1/2 tsp sugar and pinch of salt. If feeling fancy add 1 tsp red pepper flakes and 1 tsp toasted sesame seeds
For Serving, 150g cooked white rice (for reduced calories, I mix half jasmine rice and konjac rice) (konjac is 5 cal for 100g of "rice"), divide the beef and cucumber salad into 4. Original calories posted are counted for normal rice - it will be lower if you use konjac rice ❤️.
For those of you intending to omit gochujang because it is spicy....

This is also a very sad Friday for us as we are celebrating new ventures for four of our colleagues. As before, we thank them for their contributions to our department. I personally would like to thank our colleagues who have become friends. They will always have a place in our hearts and until we eventually work together again.
