Dear gentle readers

I humbly present to you the weekly update of this week. From my simple week of leave where I missed my connection flight to now delivering this update a little later than I would like. I am currently typing this update in the comfort of my home for the month, theatre 2 with an elective patient awaiting for a bed - courtesy of my beloved neurosurgeons.

Anyways I digress. I ended up sending this at home. Note to err body. When flying Air France, roll those tongues and get a multi entry Schengen visa. 'Cos you'll be able to visit Paris - courtesy of CDG airport's efficiency. I was able to take a new profile picture worthy picture though. Hats off to Samsung S25 Ultra hehe. A shoutout to Sam (not Marde) for joining me in the S25 journey <3

Pirutha was working as a medical officer at down the road in our Joburg circuits at Jhb Gen - CMJAH. Beeg hospital stronk hospital.

She found some tea about our department from fellow colleagues (Fatima) and colleagues who have worked at Stevey Bee before. Hopefully good tea. If you hear about HOT tea please spill.

In line with her current hobbies, her next birthday gift, I'd suggest a paddle racquet. Moving towards 5 years aspirations, she sees herself hopefully: with an FCA and booking her next Island holiday. Phuket is a great option. I just hauled my deflated wallet back from Europe and would be more than happy to get random snacks from 7 11 again.

Her fav song right now is Benson Boone - beautiful things. I swear we definitely need to compile a departmental Spotify playlist! Y'all are on point!

Pirutha's birthday is on 04/01/1990. Which I believe makes her a Capricorn for those of you that believe in stars and planets.

When asked about her dream destination to travel? She proudly recommends LapLand during Christmas

Weekly unsolicited week night one pot recipe

Serves however many people you decide it serves (2 people). Adapted for more

Thai green curry chicken

For those of you that goes to woolies to buy a smol tub of curry paste for R60... condolences. Yat Sang has a huge tub for the same price LOL

1 can of reduced fat coconut milk (woolies has a buy 3 for 2 special at the moment) 293 kcals

2 tsp of Mae Ploy or any other green curry paste (50g) 60 kcal (please adjust to taste)

1 pkt baby corn (100g) 25 calories

100g carrots 41 calories

200g Sliced chicken breast (330 kcal) /thigh (336 kcal skinless). Velveting your chicken will make it more tender but might up your calories by 50 cal depending on amount of cornstarch and oil you use.

1 diced onion

oil/salt/pepper

Fish sauce to taste

Put Marion’s Kitchen Thai Green Curry Paste to good use with this simple but delightfully good restaurant-worthy classic green curry.

Marion has amazing recipes

If you follow my portions, each portion of curry yields 375 kcal with approx 24g of protein (31g in chicken breast) depending on how much oil you use. #Don'tBeGreasy

Serve with jasmine rice/konjac rice. (I do a 50/50 mixture to halve my calories but still stay a full rice queen)
