Woahh we’re halfway there 🎵🎶

It’s July, and we’ve made it halfway through the year! You can either see it as “Thank goodness we’ve reached the second half” or “Oh no! It’s already the second half!”, either way, you still have another 6 months to make the most of this year! Let’s try to make the most out of 2025 ✨

Nothing says Winter Comfort Food quite like a good stew! 🥘

Here is a great Guinness Stew Recipe I got when I visited Ireland 🍀

Guinness Beef Stew

Serves: 6 Prep Time: 20 min

Cook Time: 2 hours 30 mins

Directions:

  1. Heat olive oil in a Dutch oven over medium-high heat. Season the beef with salt and pepper, then brown in batches. Remove and set aside.
  2. Add the onion and garlic to the pot, cooking until softened. Stir in the tomato paste and cook for 1-2 minutes.
  3. Deglaze the pot with Guinness, scraping up any browned bits. Add the beef back to the pot along with the broth, thyme, and rosemary.
  4. Bring to a simmer, then cover and cook on low heat for 1.5 hours.
  5. Add the carrots and potatoes, then continue cooking for another 45 minutes or until the beef and vegetables are tender.
  6. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
